Wild asparagus, with a thin stem is pleasantly bitter and much tastier than common asparagus.

Thanks to the many benefic properties and the low caloric index, the consumption of wild asparagus is recommended in many diets, including that for the diabetic diet.

They are composed mainly of water, have a very low caloric content: 100 grams of clean product contains about 25 Kcal. On the other hand, they are very rich in important vitamins such as provitamin A, C, B6 and vitamin E and K groups and mineral salts.

One of the fastest and easiest ways to eat them is in the pan with butter. After washing them, melt a knob of butter in a pan and sauté the asparagus to flavor, salt and pepper and serve hot.

Frying is always one of the most delicious ways to eat vegetables and even wild asparagus becomes irresistible with that Crunchy Batter cover. Also you will not need to blanch them before frying, because having very thin stems the hot oil will cook them to perfection.

Store the asparagus in the fridge wrapped in damp paper towels.

If you want to extend their life, you can freeze them raw in ice bags, or cooked after bleaching them for a minute in boiling water.
