Trofiette are the perfect pasta to combine with Genovese pesto, the dish that best represents the scents of the Riviera
They are prepared by rolling with the thumb on the palm of the hand, a small ball of pasta of the size of a hazelnut. During cooking, they can be enriched with some potatoes and a handful of green beans. Originally from Recco, they have become the most famous Ligurian pasta in the world.
