Tenerumi (Sicilian Courgette Sprouts) 500g

In Sicily they are also called ‘Taddi di cucuzza’. These are the leaves and shoots of a particular type of zucchini, the Lagenaria Longissima. Otherwise known as snake zucchini or pergola zucchini. Which, as can be easily deduced, has as main peculiarities the length and a curvilinear shape.

Tenerumi have been immediately appreciated for their sweet and delicate taste.

They contain abundant amounts of vitamins, fiber and mineral salts, so they are also a valuable food for health. The caloric content is reduced to a minimum: about 10 calories per 100 grams.

They can be eaten simply boiled, and seasoned with olive oil, lemon juice and salt. Alternatively, after cooking in boiling water, you can sauté them in a pan with some anchovy fillet, chili, garlic and oil.  Boiled Tenerumi can also be cut and used as a filling for a tasty Frittata.

Pasta con Tenerumi is a great classic of Palermo cuisine. A soup, in fact, of which the other main ingredients are chopped spaghetti and tomato pulp.
