Puntarelle (bunch)

Puntarelle are the sprouts of a special variety of Catalogna chicory. They look like a bunch of small sprouts and are served frequently as a cold salad with anchovy dressing or stir fried with garlic and extra virgin olive oil.

They are usually cutted into strips and chilled in cold water to crisp and curl.
