It is a Sardinian delicacy obtained from the roe of the grey mullet fish (Bottarga di muggine), salted, and air-dried, becoming ready to eat in a short time.

Usually it is grated over pasta or eaten as a thinly sliced appetizer with tomatoes, olive oil, and lemon.  It also can be used to prepare vegetable antipasti, for example it goes perfectly with raw artichokes, or side dishes.

It tastes wonderful with pasta: “Spaghetti con Bottarga” made with grated or finely chopped, extra virgin olive oil, garlic, red pepper flakes and chopped parsley – a simple but delicious dish.
