Legumes Soup Ingredients: Fagioli del Purgatorio (Beans), Hulled Cicerchia , Green Split Peas, Red lentils, Hulled chickpeas.

Wash 400 grams of soup in cold water. Fry extra virgin olive oil, onion, celery, carrot and a few leaves bay leaf. Add the washed soup and add about one and a half liters of water or vegetable broth. Cook for about 60 minutes. Salt to taste. Serve hot with raw extra virgin olive oil
