Fagioli del Purgatorio 400g

It is an ancient bean variety, there are infact evidences from the 1600.

Fagioli del Purgatorio are white, small, very tender and delicate in flavor and have a very fine skin that facilitates their digestibility

They should be soaked for 1/2 hours, rinsed and cooked in cold water for about an hour (30 min. with the pressure cooker).

They are really good seasoned only with extra virgin olive oil, salt and pepper.

Otherwise they are delicious sautéed in a pan with garlic and sage always after soaking ad boiling.
