Fresh Tuma is one of the stages in the production of Pecorino cheese, which comes before adding salt. It is a typical product of southern Italy, especially Sicily.

It is known for its mild flavour and delicate, soft yet firm texture.

It is perfect grilled as an aperitif or in an omelette.
