Fruit Cake

A fruit cake to treat yourself
INGREDIENTS:
  • 1 cup plain yoghurt
  • 1 cup sunflower oil
  • 2 cups cane sugar
  • 3 cups strong white flour
  • 3 eggs
  • 16g baking powder
  • 300g fresh fruit (peaches, apricot, strawberries..)
  • 1 Lemon (put lemon zest on a side)
METHOD:
Cut the fruit in chunks and irrorate with lemon juice.
Mix the yogurt with eggs and sugar until smooth. Add the flour, the baking powder and the lemon zest. Include the vegetable oil. The dough must be very smooth. Include the fruit within the dough using a spoon, carefully mixing quickly from bottom to top to incorporate air within the dough. Pour into a greased standard sized loaf pan and cover it with baking paper.
Bake at 170° for 45 mins in a fan forced oven.
Test by checking with a skewer – it must come out dry.
