Fave e cicoria (Fava Bean Purée with Chicory)

Often simple dishes are also the best. Fave e cicoria is a popular vegetarian side dish poor in ingredients and rich in taste, typical of Apulian cuisine.

A rustic dish, but very tasty, with the bitterness of chicory, with anti-inflammatory and depurative properties, balanced by the sweetness of beans that are legumes rich in protein, iron and vitamin C.

The preparation is simple, but requires the time of soaking if you use dry beans.

Fava beans and chicory can be served with friggitelli peppers or grilled vegetables

Ingredients:

  • Fava beans 400g
  • 3 Bay leaves
  • Chicory 400g
  • Extra virgin olive oil
  • Fine sea salt to taste
  • 4 slices of bread (optional)

Method:

Fave e cicoria is a very simple dish to prepare.

Soak dried fava beans in water for 12 hours. Rinse under running water and boil in lightly salted water for around 2 hours with bay leaves.

Clean and boil chicory in lightly salted boiling water for around 5 minutes. Drain greens and put aside.

Drain the fava beans and purée with a pinch of salt and 3 tbsp of extra virgin olive oil.

Serve chicory with fava bean purée, drizzled with olive oil and add toasted bread if you like.
