Chocolate and Pear Plumcake

INGREDIENTS:
- 200g Butter
- 200g Sugar
- 50g Honey
- 2 Eggs
- 250g Flour
- 25g Unsweetened cocoa powder
- 200ml Whole milk
- 10g Baking powder
- 150g Dark chocolate
- 700g Pear
- 1 Vanilla Pod or Vanilla extract
- Icing sugar
METHOD:
With a knife chop the dark chocolate. Melt the chocolate in a water bath and then let it cool.
In a bowl, sift the flour, the cocoa and baking powder.
In a separate bowl place the pieces of softened butter, sugar, honey and vanilla extract. Whip the mixture until it is clear and fluffy, then add eggs and continue to whisk with whips.
At the end add the melted chocolate. Add to this mixture the flour, cocoa and baking powder without stopping to whisk. Finally pour the milk at room temperature and continue to stir until a homogeneous mixture is obtained.
Peel the pears. Pour a little amount of dough on the bottom of a plumcake mold, add the pears and finish filling with the rest of dough.
Cook for about 85 mins at 170C static oven. It is better to start with a lower temperature (150C) and then increase gradually. When it is cooked, leave the plumcake in the oven with the door open and leave to cool with the oven switched off.
