Cauliflower “Pizza”

Cauliflower “pizza” is an healthy veggie-packed “pizza” option that is naturally gluten-free and grain-free.
Don’t call it Pizza! It is just an original idea to cook cauliflower making it the base of a dish stuffed with the typical ingredients of pizza.
INGREDIENTS:
- 1 Big Cauliflower
- 1 Egg
- 100g Soft cheese (Robiola for example) for a better texture or greted Parmigiano Reggiano
- Salt and Pepper to taste
- 150g Mozzarella
- 100g Tomato sauce
- Extra Virgin Olive Oil
DIRECTION:
Steam the cauliflower until tender, then shred it with a food processor until it’s rice-like in texture.
Now it is the time to squeeze out the moisture that cauliflower naturally contains.
Once the cauliflower is very dry, you can mix it with an egg, soft cheese, salt and pepper.
Transfer the mixture on baking paper and spread it with a spatula. Use your hands to press and shape the dough.
Bake until the crust is dry and golden, then flip it and bake longer until the other side isn’t soggy.
The secret is to keep the toppings minimal. Go light on the sauce, so that it doesn’t re-hydrate the crust and make it too humid.
