Caprese Cake

Caprese cake is an amazing Italian chocolate cake born in the Isle of Capri. It seems its creation dates back to 1920 from a mistake by pastry chef Carmine di Fiore.

While preparing an almond cake for three American gangsters who arrived on the island he forgot to add flour to the dough. So it is also a delicious Gluten free cake.

  • 185g Almonds flour
  • 125g Top quality dark chocolate
  • 125g Butter
  • 3 Medium Eggs
  • 125g Sugar
  • Orange peel
  • 1 Tablespoon Rum (optional)
  • Icing sugar for decoration


To prepare this Caprese Cake, first of all, melt the chocolate and butter in bain-marie and set aside.

In the meantime, separate the yolks from the whites.

Beat with the mixer the egg yolks with 80g sugar and the orange peel, the Rum and the melted chocolate.

Add the almond’s flour and stir with a spatula.

Beat the egg’s whites with he remaining sugar with an electric mixer until stiff.

Add the egg whites to the prepared mixture by turning from the bottom up.

Grease and flour a 20cm, pour the mixture and level well with a spoon.

Preheat the oven to 180°C. Bake in a static oven on the middle rack for about 30 minutes.

Remove from the oven and let the cake cool in the pan for 40 minutes.

When it’s very cold, decorate with the icing sugar.
