Broccolo Fiolaro and Guanciale Spaghetti

Broccolo Fiolaro and Guanciale Spaghetti is a very tasty, creamy and easy dish. A delicious idea to make broccoli inviting even for the little ones.
Serves 4
Ingredients:
- 400g Spaghetti or another type of pasta you like
- 150g Guanciale
- Extra Virgin Olive Oil
- 1 Shallot
- 1 Broccolo Fiolaro
- Salt and Black pepper to taste
- Pecorino Romano Cheese (if you like)
Directions:
To prepare Broccolo Fiolaro and Guanciale Spaghetti, start cleaning the Fiolaro Broccolo removing the hard ends of the stem, cut them coarsely and put them in boiling water (not salted) for about 7/8 minutes or anyway until they are soft.
Drain and transfer to the blender container with a few tablespoons of cooking water. Blend until you get a very fluid sauce and keep aside.
While the pasta is cooking, put the chopped shallot and the guanciale in a pan with the olive oil, and fry over medium heat for a 5 minutes.
Add the broccoli cream, mix and season with salt if necessary. Drain the pasta, stir in the pan with the cream of broccoli and guanciale, sprinkle with black pepper and serve
A sprinkling of pecorino cheese if you like and…Buon appetito!
