Broccoli, leeks and potatoes cream

Broccoli cream is an easy one pot recipe perfect for getting back on track for the new year! It is comforting, flavorful and packed with lots of healthy ingredients. Smooth and silky, this soup comes out so good and is ready in only 30 minutes.
INGREDIENTS
- 1 Broccoli head
- 250g sliced leeks
- 200g potatoes diced
- Extra Virgin olive oil
- 600ml of water, or vegetable stock
- Salt and pepper to taste
METHOD
Sauté the leeks in a pot with extra virgin olive oil and a pinch of salt.
Gently sweat until the soften without colouring. Add the sliced broccoli to the pan along with the sliced potatoes.
Cover with the water or vegetable stock and leave to simmer for about 30 mins. Once the veggies are very soft, blend them. Taste and season with salt and pepper.
Serve the broccoli cream hot and garnish with a drizzle of extra virgin olive oil and croutons.
