Borage Frittata

Serves 4 people


  • 6 Eggs
  • 2 Tbsp milk
  • 30g Grated Parmigiano
  • 200g Chopped Borage
  • 2 Tbsp extra virgin olive oil
  • Salt and Black pepper to taste


In a mixing bowl, whisk together eggs, milk, and Parmigiano. Stir and add salt and pepper. Set aside.

Heat olive olive oil in a pan on medium heat. Add borage and sauté for about 15 minutes. Add salt and pepper.

Once the borage has wilted, remove from heat and add at the mixture.

Put some extra virgin olive in a pan, let it warm and add the mixture. Let cook 5 minutes and then cook the other side.
