Asparagus Quiche

Asparagus Quiche is an easy and delicious recipe, perfect to be served for a brunch, breakfast or to bring for a picnic

INGREDIENTS:

Preheat oven to 180°. Place the asparagus on the baking sheet. Drizzle on 1 tablespoon of extra virgin olive oil, add salt and pepper and toss together until asparagus are fully coated with oil. Place in oven and roast few minutes, until tender and lightly browned.

Cut the asparagus into small pieces. Cook the shallot in a saucepan with some oil until soft and add it to the asparagus.

Beat egg yolks and eggs together in a medium bowl.

In a 10 inch baking pan, place the pre made (or homemade) pie pastry. Lightly brush the bottom of the crust with some of the beaten egg and cook in oven for 5 minutes.

Spread shallots and asparagus mixture in an even layer in the crust. Sprinkle the cheeses evenly on top. Very slowly pour in egg mixture over the filling.

You can add to this spring Asparagus Quiche also some cherry tomatoes for the decoration.

Bake approximately 30/40 minutes. Quiche will be cooked when a knife inserted comes out clean. Let stand 5-10 minutes before serving. Enjoy!
